山地酪農牛乳やその製品をはじめて飲んだり食べたりする人が一様に言うのが、

「きっと濃厚で美味しいんでしょうね！」

ということ。でも、それは間違いだ。山に放って草を食べさせたものは、ごくあっさりとした牛乳になる。それはそうだ、濃厚な餌を与えていないんだもの。だからあっさり、さっぱりした味わいになる。

元来、濃厚なものはハレの日のご馳走である。そんなのを毎日飲む必要はない。いまの日本は毎日がハレの食卓になってしまっているのが問題でもある。米も肉も麺も牛乳も野菜も、インパクトのある、甘い、ねっとりした、コクのあるものがいいとされる。でもそんなのが全てになってしまったら食文化の崩壊だ。

ほんものはあっさり、軽い。

それが真実だと思う。
